carrot cake with cream cheese frosting

DESCRIPTION
these light, moist carrot & pineapple cupcakes are just delicious! full of grated carrot and toasted nuts, has great flavor, especially when covered with a creamy cream cheese frosting which adds a little richness to the cake. and i love the added crunch of the walnuts. the interesting part is that while those pretty orange flecks of grated carrot give the cake color and texture, along with sweetness and moisture, its flavor is almost indistinguishable.
