friday carrot cupcakes

carrot cupcakewith the days becoming increasingly grayer, colder and wetter (although it's spring time!), it's the perfect excuse to stay inside and bake. waiting for the right moment (right moment for me is when my lil' angel is sound asleep or happily playing by herself in the living room), i rolled up my sleeves, prepared all the necessary ingredients, measured them accordingly and baked 2 batches of carrot cup cake for my husband to take it to work on Friday (today!). well well well i have a group of fabulous supporters out there (*wink*wink*). thanks peeps!

why carrot cake?? simply because, it never goes out of style! one bite will tell you why. my husband will tell you why :) this rich and moist carrot cake, full of grated carrot and toasted pecan nuts, has great flavor, especially when covered with the cream cheese frosting. this creamy cream cheese frosting adds just enough sweetness to round it off actually. the interesting part is that while those pretty orange flecks of grated carrot give the cake color and texture, along with sweetness and moisture, its flavor is almost indistinguishable. really decadent!

    This cupcake was again very good.

    The icing was delicious, quite sweet, but lovely creamy texture and a good match for the not as sweet, chunky cake itself.

    The carrot cake was very tasty and was "high quality", you could certainly taste the nuts and other bits and pieces in it, I think I even got a little bit of pineapple or something?

    In summary, very yummy, high quality, not too big. Nice presentation, fairly simple.

  2. Mmmm, cupcake looks and tastes delicious. Good concentration of walnuts. The icing was creamy and airy. A tad too sweet for me but I think it's because I'm not an icing person (I normally scrape the icing off of cakes).

    Overall the cake it self was good and I can taste a lot of spices.
